Let's go shopping at Costco and make healthy summer recipes. I bought everything I needed at Costco to make grilled beef kefta with yogurt sauce and chia seed pudding parfaits. Got some 100% grass-fed beef, organic yogurt, chia seeds, paleo granola and more at Costco, then headed back to the kitchen to cook. Should I do more videos like this? Beef kefta w/ sauce recipe:
For the kefta:
1.5 pounds grass-fed beef
2/3 cup almond flour
1/3 cup almond milk
1 tablespoon no salt added organic kirkland spice rub
2 tablespoons fresh parsley, chopped
1 teaspoon salt
Few cracks of pepper
For the yogurt sauce:
1/2 cup of grated cucumbers
1 cup organic greek yogurt
Zest and juice of half a lemon
1 tablespoon fresh parsley, chopped
1 cloves garlic, finely grated
1 teaspoon extra virgin olive oil
1/3 teaspoon of salt
Couple cracks of pepper
Make the kefta by soaking the almond flour with just enough almond milk to make it mushy, set aside. Combine all of the kefta ingredients in a bowl and then add the almond flour mixture, and mix until just combined. Wet your hands and form the kefta, set aside.
To make the yogurt sauce, combine everything in a bowl and mix well. You don't have to salt the cucumber like I did in the video, I don't think the water content will make a big difference. Check for seasoning, you want the sauce to be very bright and citrusy, so add more lemon if needed.
Grill the kefta until cooked through, and only flip them once. If you want to cook in oven, bake at 350F for about 20 minutes, or until they feel firm. Enjoy!
For the chia seed pudding:
1 cup almond milk
2-3 teaspoons of monk fruit sweetener
1/2 teaspoon vanilla extract
3 tablespoons chia seeds
Organic greek yogurt
Add the almond milk, monk fruit sweetener, strawberries, and vanilla to a blender and mix on high. Check for sweetness, you may need more monk fruit. Transfer to a bowl and whisk in the chia seeds, one tablespoon at a time. Make sure to whisk well and let it sit for a few minutes, whisk again and let it sit a few more minutes, then whisk one more time and store in the fridge overnight to thicken. Make the parfait by layering pudding, yogurt, and granola. Enjoy!
